2 cups of Medjool Dates (deseeded)
¼ cup of coconut oil
2 teaspoons almond extract
½ teaspoon sea salt
1 cup of unsweetened dried coconut
Place all the ingredients in a food processor. Pulse blend until a large ball forms and you have small chunks of dates remaining. You may need to use your spatula to wipe ingredients from sides and make sure everything is processing evenly. Roll into 1” balls. Refrigerate for at least two hours. You can eat immediately, but refrigerating will allow ﬂavors to blend together and the coconut oil to harden creating a ﬁrm and delicious texture.
