Raw Vanilla Chia Pudding

There's nothing like pudding to bring a smile to your face, and this raw pudding recipe made with chia seeds will do just that. Easy to prepare and chock full of fiber, protein, antioxidants and healthy omega-3 fatty acids, this superfood pudding serves as a great breakfast, dessert or snack. So let's get to making it!
 

Ingredients:

1 cup cashews
2 1/2 cups water
2 tablespoons maple syrup(or 2-3 large dates)
2 vanilla pods (or 1 tablespoon pure vanilla extract)
A tiny splash of almond extract
1 teaspoon cinnamon
pinch sea salt
1/4 cup chia seeds

Add the water, maple syrup, cashews, almond extract, vanilla, cinnamon and sea salt to a blender.  Blend for 2-3 minutes or until the mixture turns into a fine nut milk. Pour in the chia seeds and give it 2 or 3 quick pulses with the blender. Stop there, as you do not want to crush the chia seeds. Pour into a dish, cover and put into the fridge for 1-2 hours. The seeds will expand, creating a thick and creamy pudding texture.

Serve with a sprinkle of cinnamon, or top it off with slices of your favorite fruit, nuts or jam. Enjoy!
